Arroz ala Cubana
This savory ground beef dish is served with fried egg and fried banana ("saging nga sab-a").
Ingredients:
2 tablespoons canola oil
2 cloves garlic, minced
4 onions, chopped
1 small tomato, diced
1/2 kilo ground beef (*I use Monterey Lean Ground Beef.)
1/2 carrot, sliced
3 small potatoes, cut into small cubes
2 tablespoons soy sauce
1/2 tablespoon Worcestershire sauce
1/4 cup raisins
1/2 cup peas
salt and pepper
3 pieces ripe sab-a bananas, peeled, sliced lengthwise, and pan-fried in 3 tablespoons of canola oil
1 egg (or more, if you want), fried sunny side-up
Procedure:
Heat oil in a pan over medium heat.
Add the cubed potatoes and carrots.
Fry until the edges turn a light brown.
Remove potatoes & carrots with a large spoon and place in a separate container.
Add and saute garlic until lightly browned, about 2 minutes.
Add onions and saute until fragrant and softened, about 5 minutes.
Add tomatoes and saute until softened, about 5 minutes.
Add beef, soy and Worcestershire sauces.
Stir to blend well as it cooks.
Brown meat over medium heat, about 15 minutes.
Add raisins & peas, stir, and cook for another 5 minutes.
Then put the carrots and potatoes back in.
Cook for 30 seconds.
Season with salt and pepper.
Serve with rice, fried egg, and fried bananas ("saging nga sab-a").
