LECHE FLAN
(Ingredients)
For caramel:
1/2 cup sugar
2 tablespoons water
For flan:
6 eggyolks
2 eggs
3/4 cup sugar
1 1/2 cups fresh milk
Procedure:
1. In a half gallon pan, caramelize sugar and water till golden brown.
Turn caramel around pan to coat sides evenly.
2. In a bowl, combine flan ingredients and mix thoroughly with a whisk or eggbeater.
Strain mixture into prepared pan.
Cook in a double boiler for 40 minutes until firm.
Cool and keep in the ref a few hours before inverting into a deep serving dish.
(serves 6-8 portions)
