"Valenciana"


"Suman"

Ingredients:
'Pilit' ('Malagkit' / Glutinous Rice)~ 1 & 1/4 kilos
Mature Coconut ("Lubi")~4 peices, grated
Brown Sugar~1 kilo
'Pinipig' (Dried Young Coconut)~1/2 cup
Water~4 cups

Topping:
"Latik" (toasted bits that remain when coconut milk is cooked until the oil is extracted)

Instructions:
1.) Place the grated coconut in a bowl. Add the water and squeeze to extract about 4 cups coconut milk, set aside and discard used grated coconut.
2.) In a pot, boil the coconut milk. Add the sugar; stir to make sure the sugar is dissolved. Lower heat and simmer for about 30 minutes or until it slightly thickens.
3.) Add the cooked 'pilit' ('malagkit' / glutinous rice) and pinipig into the pot and mix well to combine. Transfer cooked SUMAN to a serving dish (you can line it w/ banana leaves if you like, for a 'native touch'). Spread evenly with "latik" before serving.

Steamed Puto
(home-made "Filipino favorite" Steamed Puto with cheese)
Instructions:
1.) Boil water in a steamer.
2.) Combine Puto Mix and water until well blended. Add the sugar and mix for 30 seconds. Gradually add cooking oil and continue mixing until smooth. Pour into puto molds about 3/4 full.
3.) Steam for 25 minutes. Puto is cooked when surface is shiny and bounces back when pressed. Brush the surface with Selecta Butterfresh Margarine or any brand you prefer.
