IBOS/SUMAN
Ingredients:
4 cups sticky/glutinous rice (or "pilit" ~ as we call it in our Ilonggo dialect)
3 cups thick coconut milk
1 - 1/2 tablespoon salt
The *"wrap" for the Ibos/Suman:
(The "wrap" used are the tube-like containers made of young coconut leaves shaped into cylinders about 3 centimeters in diameter and 10 centimeters long.)
How to prepare the Ibos/Suman:
1. Wash the sticky/glutinous rice and mix with coconut milk & salt.
2. Wrap mixture in prepared buri leaves (but do not fill them up completely).
Close the end of tube with a toothpick which you can take from the midrib of the coconut leaf.
Tie with buri strips.
3. Place Ibos/Suman in a large container.
Fill it up with water and remaining 1 cup coconut milk until Ibos is completely immersed.

6. Boil until cooked for about 2 - 2 & 1/2 hours.
IBOS is usually eaten with sugar (in my case, Muscovado!).
It is also best served with hot coffee and ripe mangoes! ☺
