My homemade LENGUA (Ox Tongue) and MASHED POTATO ~ two of my family's favorites ♥


Hello, friends!
Am admittedly no 'professional chef' or 'expert cook' 
~ but am proud to say that I have perfected my  Lengua  and  Mashed Potato  recipe that suites my family's taste. ♥

Herewith are pictures of the homemade  Lengua  and Mashed Potato  I cooked as post-birthday celebration of our unico hijo B.E. ♥

my homemade LENGUA

Lengua (Ox Tongue) in Mushroom-Butter Sauce

Ingredients:
1 ox tongue
2 tablespoons calamansi juice
1/4 cup soy sauce
1/4 cup olive oil
1/2 cup *butter (*I use Anchor butter.)
5 cloves garlic, minced
2 medium onions, chopped
Salt to taste
1pc. bay leaf
1 stalk celery, finely chopped
1 pc.carrot
1/4 teaspoon peppercorn
1/4 cup white wine
Enough broth or water to cover tongue

Procedure:
Rub tongue with salt and vinegar.
Rinse and boil 5 minutes.
Scrape well white coating on surface.
Marinate in calamansi juice and soy sauce for 1 hour.
Brown in olive oil and butter.
Set aside.
In the same pan, saute garlic and onions.
Put back the tongue and blend the rest of the ingredients.
Pour into large saucepan, bring to a boil, then lower heat, simmer for 3 hours or until tongue is tender.
Strain sauce, set aside.
Slice tongue and arrange on a *platter. (*I arranged mine in a pyrex dish.) 
Garnish with chopped fresh *celery. (*I garnished mine with curly parsley because celery was unavailable when I bought my ingredients.)
Then prepare mushroom-butter sauce.

Mushroom-Butter Sauce

Ingredients:
1/2 cup butter
1/2 cup mushrooms, sliced
1/4 cup all-purpose flour
Strained sauce from tongue

Procedure:
Melt butter in skillet.
Blend in flour.
Add the mushrooms and strained sauce.
Cook until bubbly.
Water may be added if sauce is too thick.
Pour over sliced meat and serve.

my homemade MASHED POTATO

Mashed Potato

Ingredients:
1 kilo potato, peeled and cubed
3/4 cup fresh milk
3 tablespoons (Anchor) butter, melted
2 teaspoons salt
3 to 4 cups of water

Procedure:
Combine potatoes, 1 teaspoon salt, and water in a cooking pot and bring to a boil.
Cook for 8 to 10 minutes or until the potatoes are tender.

Turn off the heat and drain the water by placing the potatoes in a colander.

Transfer the potatoes in a large mixing bowl then add the remaining 1 teaspoon of salt.
Mash using an electric mixer.
You may also use fork for this procedure.

Pour-in the melted butter then mix again until everything is well incorporated.

Gradually add the fresh milk while mixing;
continue mixing until all the ingredients are well distributed.

You may garnish with any vegetable or herb you want.
I garnished mine with fresh "curly parsley" because there was no available celery @ Fresh Start Organics when I went there.
