My homemade MALUNGGAY SPAGHETTI CARBONARA ♥


My son B.E. absolutely loves  CARBONARA.
That is why I always make sure not to run out of ingredients in our kitchen.
My version has Malunggay (Scientific Name: Moringa oleifera or "Balunggay" in our native Ilonggo) spaghetti noodles, mushrooms and red & green peppers.


Unfortunately, I ran out of green peppers when I cooked my CARBONARA recently (see pic below), thus, was able to include only the red variety.
Happy that my son & the rest of the family found it filling and satisfying just the same.

my homemade CARBONARA

Ingredients:
200 grams bacon, cut in fine pcs.
1/2 cup mushrooms, sliced
1 head garlic, crushed
1/2 cup red pepper/or green pepper (sweet variety), diced
1 8-oz. pkg.Malunggay spaghetti noodles
2 eggs, well-beaten
2 tablespoons evaporated milk
1/2 teaspoon salt
1/2 cup freshly-grated Parmesan cheese

Procedure:
Fry bacon.
 Set aside.
 In 2 tablespoons of bacon fat, brown garlic lightly.
 Add red/green pepper and mushrooms.
 Set aside.
 Cook the malunggay spaghetti noodles according to package instructions.
 Drain and set aside.
 While hot, fold in beaten eggs, milk, salt, some bacon, sauteed peppers and cheese.
 Garnish with remaining bacon, sauteed peppers and cheese.
 Serve at once.
