(homemade Pork Tocino)
Tocino is a Spanish word that means 'bacon' or 'cured meat'.
Pork Tocino or Sweetened Cured Pork is a sweet dish that is traditionally served for breakfast in the Philippines.
Preparing it is very easy. Just fry it in medium temperature until it caramelizes in the edges. It is best served with rice and eggs.
What I had for my breakfast this morning is homemade Pork Tocino ~ made by my friend N. who is an expert home cook.
My friend N. doesn't use preservatives like "salitre" or "saltpeter" nor does she use "monosodium glutamate" (trade names: "Ajinomoto"; "vetsin") for flavor enhancement, etc.
She only uses natural ingredients like calamansi and muscovado sugar for flavoring.
She also uses organic pork meat thus I can safely say that my Tocino is a 'healthier' version than the one which uses ordinary pork meat.
Tocino is quite tasty if you have a sweet tooth ~ like me! ☺
