It's lunch time, friends.
Let's have Pinakbet ("Pakbet") for lunch!
Goody, this is one of my simple 'lutong-bahay' favorites. ☺
Vegetables are always a healthy idea in cooking so I prepared Pinakbet for lunch.
Pinakbet is cooked with pork belly sauteed in garlic & onions, vegetables like squash, okra, eggplant, string beans, & ampalaya (bitter melon), and sauced with shrimp paste.
In cooking Pinakbet, I prefer not to add salt anymore because the shrimp paste is already there to add flavor. ☺

Miss you, LEy! D'U still remember those innocent days of our youth...with Sherry Ann P.? Hmm, remember when I lost my wallet and I was so distraught, nakit-an man gali?! I still recall those times...happy happy days of summer...makes me smile now :-)
