CHOPSUEY
Chopsuey is one of my top vegetable dishes.
It is a dish made up of meat (chicken or pork) and seafood (like shrimp) cooked with chicken liver and different kinds of veggies.

Ingredients:
1/4 kilo pork, sliced to small pcs.
1/4 kilo shrimps, shelled, deveined and halved
18 pcs.quail eggs, cooked
1/4 kilo chicken liver or gizzard, sliced to small pcs.
1/4 kilo cauliflower, broken to bite size
1/4 kilo string beans (in Ilonggo, "balatong")
1/4 kilo snow peas ("sitsaro")
1/4 kilo cabbage, cut in squares
2 stalks leeks, cut 2 inches long
3 stalks celery, cut 2 inches long
5 cloves garlic, diced
2 onions, diced
1 carrot, sliced thinly
1 pc.red bell pepper, cut in strips
1 pc.green bell pepper, cut in strips
2 tbsp cornstarch, dissolved in 1/4 cup water
2 cups chicken stock (broth)
3 tbsp sesame oil
3 tbsp fish sauce ("patis")
4 tbsp corn oil or vegetable oil
Salt to taste
Directions:
Saute garlic and onions in a big pan. Add pork and saute for 3 mins. Add chicken liver & gizzard and continue to saute for another 3 mins.
Add 1 cup chicken stock (broth) and a pinch of salt ("asin"), simmer for 10 mins.until pork and chicken giblets are cooked.
Add shrimp. Then, add and mix all the veggies. Add remaining 1 cup of chicken stock, fish sauce ("patis"), and dissolved cornstarch. Cook for about 5 mins.until veggies are done.
Add sesame oil. Sprinkle with salt and pepper according to your taste.

Serve Chopsuey freshly-cooked so veggies are really crunchy! ☺
(Note: Chopsuey has no exact measurements of ingredients ~ meaning, you could always adjust the ingredients.
Personally, I like to cook my Chopsuey with some "sabaw" [soup] ~ but others prefer it without. The key to a delicious Chopsuey is not to overcook the veggies.) ☺
