BLUEBERRY MUFFIN from Bob's

Aaahh...simple joys!
Went to Bob's and bought my usual bread supply for the family ~ Ciabatta, Focaccia, French Bread, etc.
Had my favorite Blueberry Muffin ~ bliss! ♥


Here's a homemade recipe for Blueberry Muffins:
Blueberry Muffins Recipe

Dry Ingredients:
1/2 tsp salt
1 & 1/2 cups All-Purpose Flour
2 tspc baking powder

Butter Mixture:
1/2 cup unsalted butter
2 & 1/4 cups sugar
2 pcs eggs
1/2 cup fresh milk
2 pcs eggs
1/2 cup fresh milk
2 cups blueberries

Streusel Topping:
1/4 cup brown sugar
1/2 cup All-Purpose Flour
pinch of Cinnamon
1/4 cup unsalted butter

Directions:
Mix cream, butter, and sugar till light then add the eggs one at a time, beating well after addition.

Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

Pre-heat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

Bake for 20 to 25 minutes in the pre-heated oven, until done.
